Confetti Rice with Chicken (Instant Pot)

Creating a fun gluten-free meal doesn’t need to be complicated. This simple one-pot dish pulls together basic ingredients with delicious results. Bonus: on a busy night the electric pressure cooker makes cooking and cleaning that much easier.

  • 1 TBSP avocado oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • 1 c brown rice, rinsed
  • 2 c stock/li>
  • 2 c red pepper, chopped
  • 1 c carrots, diced
  • Salt and pepper

Preheat electric pressure cooker by selecting SAUTÉ. When the pot is hot, add oil and cook paprika, oregano for 30 seconds, then add garlic, stirring often, until fragrant, about 30 seconds more.

Stir in rice, broth, peppers, and carrots; season with salt and pepper. Add chicken and season generously with salt and pepper. Select CANCEL to reset the program.

Close and lock the lid. Select MANUAL and HIGH pressure for 20 minutes. When cook time is complete, allow the steam to naturally release for 5 minutes. After this time, carefully quick release the pressure, remove the lid, and shred the chicken. Mix well and serve.
