Creating a fun gluten-free meal doesn’t need to be complicated. This simple one-pot dish pulls together basic ingredients with delicious results. Bonus: on a busy night the electric pressure cooker makes cooking and cleaning that much easier.

Ingredients
- 1 TBSP extra virgin olive oil
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 cloves garlic, minced
- 1 c brown rice, rinsed
- 2 c low sodium chicken broth
- 1 sweet bell pepper (red, yellow, and/or orange), chopped
- 3 carrots, diced
- Salt and pepper
- 1½ lbs boneless skinless chicken breasts lbs boneless, skinless chicken breasts

Directions
Preheat electric pressure cooker by selecting SAUTÉ. When the pot is hot, add oil and cook paprika, oregano, and garlic, stirring often, until fragrant, about 1 minute.
Stir in rice, broth, peppers, and carrots; season with salt and pepper. Add chicken and season generously with salt and pepper. Select CANCEL to reset the program.
Close and lock the lid. Select MANUAL and HIGH pressure for 22 minutes. When cook time is complete, allow the steam to naturally release for 5 minutes. After this time, carefully quick release the pressure, remove the lid, and shred the chicken. Mix well and serve.
