You got a great deal on watermelon and most of it got eaten, but now you have leftover watermelon you don’t want to waste.
So what do you do with the leftover watermelon? How do you use it before it gets too watery to eat? One of our favorite solutions is watermelon popsicles.
Fruit popsicles are the best summer snack. They’re naturally sweet, gluten-free, and you don’t need to worry about questionable ingredients. In fact, this popsicles recipe only has one ingredient: watermelon.
This homemade popsicles recipe is intentionally flexible so you can choose how many popsicles to make, depending on how much watermelon you have on hand. Do you have loads of leftover watermelon? Make a bunch of popsicles. Are you looking for a way to use up the last of your watermelon haul? Just make a few. It’s a simple, customizable recipe.
How to Make Homemade Watermelon Popsicles
Remove watermelon rinds and black seeds (its fine if you don’t get all of the white ones out). Slice the watermelon into pieces. The size doesn’t have to be exact, but small chunks pack into the blender better than large chunks.
Put the watermelon pieces in the blender and process until they are liquefied.
Pour the liquid into popsicle molds, leaving room for the level to rise when you insert popsicle sticks. A funnel may be helpful for this step.
Insert popsicle sticks. Find a flat area in the freezer for your mold and freeze the watermelon popsicles. Freezer time will vary depending on the size and shapes of the mold, but shouldn’t take longer than 4 hours.
Store popsicles in the molds or an airtight container in the freezer until right before they are served.
What Do You Do With Extra Watermelon Purée?
If you filled your molds with liquefied watermelon but still have left over puree, you’re in luck. Here are some ideas for how to put extra watermelon purée to use.
Drink watermelon juice
Strain the liquid watermelon through a sieve to remove the pulp and then drink up. Watermelon juice tastes like the essence of summer!
Make watermelon granita
Also know as slush, granita is another way to use your watermelon.
Pour the extra watermelon liquid into a baking pan or dish and place in the freezer. Every 30 minutes or so use a fork or something flat like a scraper to break up the thin ice and then return the granita to the freezer. After a couple of hours it will become frozen slush. Keep it frozen until serving, at which time you may break it up once more. Serve in dishes with spoons.
Save it for a smoothie
Save it in an airtight container in the fridge and add it to a smoothie tomorrow morning. Top off a high speed blender filled with greens, frozen bananas, and other mix-ins.
